Super simple, this is a classic summer salad. Our twist is making it with rice wine vinegar that gives it just a hint of sweetest. The radishes give a wonderful pop of color and a slight hint of heat – but keep them thin.
- 4 small cucumbers peeled, seeded and sliced into half moons
- ½ cup very thinly sliced radishes
- ½ cup olive oil
- ¼ cup rice wine vinegar
Add cucumbers and radishes to bowl toss well with vinegar and olive oil. Season with salt and pepper.
